Apricot Chicken curry

Yesterday I am watching a documentary in Netflix, A Cook Abroad. It is about a Punjabi Chef born and brought up in Scotland came to his root in Northern India search for authentic Punjabi Cuisine. Various veg and non veg recipes and delicacies are shown over there. What caught my attention was a chicken dish, Apricot Chicken curry. This dish is a authentic cuisine of Patiala Maharaja's royal kitchen.Chicken cooked with spice and masala along with dried apricot.As it shown it is very rich cuisine and apricot gave it a sweet and tangy flavor. I tasted variety of chicken dishes but this is new for me. Today I woke up and first thing I  thought to make Apricot chicken curry.It is  a perfect combination with steamed rice or pilaf.







Ingredients:

1 lb chicken

1 big onion(chopped)

2 tbsp of garlic and ginger paste

1 tbsp red chili powder

1 tbsp of coriander powder

1 tsp turmeric powder

1 tsp of garam masala

1 tsp big cardamom

1 tsp clove

1  inch cinnamon stick

2 dried red chili

2 bay leaves

2 tsp sugar

Lukewarm water

Ghee for making curry(clarified butter)

1/3 cup dried apricot(seedless)

salt to taste


Method

Heat ghee in a big pan. Add dried red chilies and bay leaves. Fry a bit then add cardamom, clove, cinnamon stick.Add chopped onion. Fry until light brown. Add ginger and garlic paste.and saute until oil separates.

Add chicken mix well. Add turmeric powder, red chili powder, coriander powder, salt , sugar and mix well.Simmer the gas and cover the lid. Let it cook for 10 minutes.

After 10 minutes add dried apricot and lukewarm water to make curry.

After apricot mashed properly with masala and chicken are cooked add garam masala powder. Mix well and switch off the flame.

Royal delicacy Apricot Chicken curry is ready to eat.
