Chicken curry with Bamboo shoots.

From this week my son started kindergarten. His school time is very long, I am getting a lot of spare time, but also I am feeling very lonely. No jumping, running or screaming noise around me. He is busy with his new friends and all but frankly I am missing him. As I told him that I am missing him he said don't worry mamma I will come back soon and we will play. He is a little boy but knows how to soothe mom with his sweet voice. I am happy he is enjoying his school.

With my spare time I am concentrating more on exploring new recipes. When I am in college I often went to a Chinese restaurant for one dish that is chicken curry with bamboo shoots. I love that. Some people don't like bamboo shoots for its pungent smell. But I love bamboo shoots.I didn't know what  ingredients they used to made that dish, but I can remember its taste. So I tried to made that dish. It's not authentic, but it is definitely tasty. Enjoy it with steamed jasmine rice or fried rice or with simple noodle dishes.

Serves- 2

Preparation time- 20 minutes

Cooking time - 30 minutes






Ingredients:-


1 cup of boneless chicken(bite size pieces)

4 small potatoes (peeled)

2 tbsp onion paste

2 tbsp ginger garlic paste

1 tbsp fish sauce

1 tsp sugar

1 cup of coconut milk

5/ 6 lime leaves shredded

1/2 cup bamboo shoots
( drained and shredded)

1 tbsp paprika powder

1 tsp white pepper powder

2 tbsp spring onions (chopped)

1 tbsp roasted peanut crushed

1 tbsp chopped cilantro

2 tbsp olive oil

Salt for seasoning



Method:-


Heat olive oil in a frying pan. Add onion paste stir fry for a minute then add ginger garlic paste. Stir fry for another 2 minutes. Then add potato and chicken.Mix very well.

Add shredded bamboo shoots, lime leaves, fish sauce, paprika powder, white pepper powder, sugar , salt and fry for 2/ 3 minutes.

Pour in the coconut milk and water (as needed for making gravy), cook in low flame until chicken and potatoes are well cooked. Add coriander leaves chopped peanuts and garnish with spring onion. Serve hot with rice dishes or noodles.
