Beetroot Barfi ( Beetroot Fudge)

Raksha Bandhan or in Bengal which we called Rakhi Purnima is next week. This Hindu Festival is celebrated in many parts of India. On Rakhi Purnima (full moon day)sisters tie a rakhi(sacred thread) on her brother's wrist. This symbolize the sister's love and prayers for her brother's well being and the brother's lifelong vow to protect his sister. Indian festival means sweet dish. I made a new sweets  with Beetroot, its very tasty and easy to make.My  brothers are all in India so  I  want to dedicate this recipe to all  those sisters who wants to make sweets for there brothers in Raksha Bandhan.






Makes - 10 - 12

Preparation time - 30 minutes

Cooking time - 30 minutes



Ingredients:-



2 medium beetroot(grated)

2 cups sugar


1 half pint heavy cream


Ghee or Clarified butter - 2 tbsp


1 tsp cardamom powder


1 tbsp  broken cashew nut




Method:-


In a heavy bottom pan heat ghee. Add grated beetroot and saute for 5 minutes or until raw smell is gone.

Add heavy cream and let it cook until beetroot is cooked. Add sugar and saute until ghee separates. Add cardamom powder and mix well


Buttered a plate very well. Pour beetroot mixture on it. let it cool for 5 minutes, then with a knife cut it into square shape. Let it cool completely then  refrigerate for 2 to 3 hours


Gently take out beetroot barfi and transfer it into a serving plate. Garnish it with cashew pieces.


Beetroot Barfi /fudge is ready to serve
