Elephant Foot Yam or Oal is a tropical tuber crop grown primarily in Africa, south Asia. In India this species as a crop grown mostly in Bihar, west Bengal, Kerala, Karnataka, Andra Pradesh, Maharasthra and Orissa. It is popularly known as "Oal" in Bengal "Suran or Jhimikaand" in Hindi. In West Bengal Yams are eaten fried or in yam curry. The Elephant foot yam is widely used in Indian medicine, Its prescribed for bronchitis, asthma, abdominal pain dysentery etc.
I love to eat Oal or yam. I got frozen one, boiled and after mixing with spices made koftas and fried. I like to make kofta curry( koftas in rich gravy ) but this time I just made koftas as a snack.
Makes - 10 - 12
Preparation time - 20 minutes
Cooking time - 15 minutes
Ingredients:-
1 pack of frozen Yam(boiled and mashed)
1 onion(chopped)
2 tsp garlic paste
1 tsp red chili powder
1 tsp chat masala
1 tsp sugar
1 tbsp lemon juice
2 tsp coriander powder
2 tsp kasuri methi( dried methi leaves)
1/2 cup coriander leaves( chopped)
Spring onion for garnishing
Salt to taste
Vegetable oil to fry
Method :-
In a bowl mix all ingredients except oil. Make a tight mixture. Wet your hands take a tennis ball size mixture and by pressing hands give it a kofta shape. Do same with all mixture.
Heat oil in a frying pan. Gently place koftas to fry. Simmer the gas and fry until both sides are golden brown.
Garnish with ring onions and spring onion. Serve with hot tea or coffee.
