Khinkali( A Georgian dumpling)

In my view, if you don't love to eat food you can be a good cook. Besides cooking and eating food I love to watch cooking documentaries and browse recipes as well. Everyone has a list of favorite foods, from my list I love any kind of dumplings. While watching youtube I found a new recipe of dumplings which I never heard of,  that is "Khinkali".

Khinkali is a dumpling dish of Georgia, Tbilisi. It's originated in the Georgian mountain region. The filling of Khinkali varies with the area. It consist of meat mince filling of lamb, pork, beef or mixed meat. With meat mince, herbs like cilantro or parsley are used with black pepper and salt. The meat filling is uncooked when Khinkali is assembled. To make Khinkali juicier water is used along with herbs and spices. After assembling, khinkali(dumplings) are cooked in boiled salty water. The juice is trapped inside the dumpling and it has typically eaten first by sucking the juices while taking the first bite. It's an amazing dish. I ate lots of dumpling dishes but this is unique by its simplicity and awesome taste.  


Serves - 4

Preparation time - 30 minutes

Cooking time - 10 minutes 




Ingredients:-


For stuffing

1 1/2 cup of meat mince

1 1/2 cup of warm water

1/2 cup of fresh cilantro/ parsley

1 tbsp black pepper powder

Salt for seasoning


For dumplings

1 1/2 cup of all purpose flour

Warm water to knead dough

Salt for seasoning

Method:-


In a bowl add all purpose flour, salt and warm water and knead a tight dough. Cover and keep aside.

In a bowl add mince meat, water, salt, black pepper powder and parsley/cilantro. Mix well and keep aside for 30 minutes.

Soften the dough by pressing it with hands. Then make small balls out of dough. Roll small balls in to circle shape add 1 tbsp of meat mixture and giving plead,fold it into a dumpling. Discard the extra dough on top.

Take  a big pan boil 5 to 6 cups of water. Add salt on it and stir. When water is bubbling add dumplings on it. Cook for 7 - 8 minutes. Then drain in a strainer. Khinkali is ready to eat.

Serve it hot, and don't forget to suck it juice or it will be a mess.
