Til Posto Bata diye Begun:

Eggplant, Begun in Bengali is the most favorable vegetable among Bengalis. Begun Pora(Charred Eggplant), Begun bhaja( Eggplant fry), Beguni( Eggplant batter fry) is the most delicious dish and Bengalis love them most. Though in summer season Begun pora doesn't taste good and for health reason as Begun bhaja( Eggplant fry) consume lots of oil I scarcely made them. Today I tried  Sada Til r posto bata diye Begun (Eggplant with poppy and sesame seed paste). For this dish, mainly we need small round eggplant and til and posto bata( Sesame and poppy seed paste). It is a pure Vegetarian recipe with no onion garlic. Follow my recipe and make "Til posto diye begun" an awesome tasty dish.

Ingredients:- 

8 whole small round eggplant
2 tbsp white sesame seeds
1 tbsp poppy seeds
2 tbsp green chili paste
1/2 cup tomato puree
1 tsp turmeric powder
Mustard oil
Salt for seasoning

Instructions:

1. In warm water soak white sesame seeds and poppy seeds for 30 minutes. Grind it in a grinder along with green chilies to make a smooth paste.

2. Wash the eggplant and cut like crisscross on the bottom of the eggplant. Don't remove the stem of it.

3. Rub salt on it. Heat mustard oil in a Kadhai or deep frying pan. 

4. Fry whole eggplant in medium flame until soft for 7 to 8 minutes. Take out and keep aside.

5. In the same oil add cumin seeds and dry red chilies. Roast it for 1 minute then add tomato paste cook it for 5 minutes for then add green chili paste, salt, and turmeric powder then cook it for again five minutes.

6. Now add poppy seed paste and sesame seed paste cook for a while and then add fried eggplant. Add 1 cup of warm water and simmer the flame cover and cook for 10 more minutes. 

7. After 10 minutes check the seasoning and within this time eggplant will be soft and coated by all masala. Switch off the gas and serve hot.

8. Serve 'Til posto bata diye Begun'(Eggplant with sesame and poppy seed paste) with hot rice or roti.
