Lau Chingri:


There is a folk song in West Bengal "Sadher Lau Banailo More Bairagi". Lau or Bottle gourd is very popular and loved by the people of Bengal. Every portion of this plant is consumed in a Bengali household. In the village people plant Bottle gourd for everyday use, it has medicinal benefits too. My family loves this vegetable. Non-vegetarian to vegetarian, we can make various types of dishes with it. Lau Chingri which is Bottle gourd cooked with small shrimp is a Bengali delicacy. Bengali people have emotions and love with this dish. Bengali's are popular their love for fish, we add fish with the vegetables which make the vegetable tastier. With this dish, rice is a must and must.

4 cup grated Bottlegourd
12 piece medium shrimp
7 piece green chilies slitted
1 medium tomato chopped
2 tsp cumin seeds
1 bay leaf
1-inch whole cinnamon stick
1 dry red chili
2 tsp turmeric powder
2 tsp coriander powder
2 tbsp sugar
2 tbsp mustard oil
Salt for seasoning.

Instructions:

1. For making Lau chingri, first clean and wash shrimps and drain all the excess water. Then smear turmeric powder and salt on it keep aside.

2. Bottle gourd/Lau naturally consists of lots of water so before peeling the bottle gourd wash it nicely so you don't need to wash afterward to prevent absorbing water. After washing peel the bottle gourd and grate it in a grater.

3. Heat mustard oil in a kadhai or frying pan add shrimp/chingri fry for 2 minutes, over frying will make it chewy. Keep out and keep aside.

4. In the same oil add bay leaf, dry red chili, cumin seeds, and cinnamon stick, let it fry for a bit now add grated bottle gourd on it.

5. Fry for 2 minutes then add chopped tomato, turmeric powder, green chilies, coriander powder, salt, and sugar. Low the flame, cover it, and let it cook for 10 minutes.

6. After 10 minutes the bottle gourd /Lau will release water and will be half cooked. Now add fried shrimp and rise the flame in medium. Stir occasionally and cook it until it releases oil. 

7. Lau chingri/ Bottle gourd with the shrimp is ready to serve. Serve hot with steamed white rice. It is good for lunch and dinner.
