Shrimp Scampi:

The weather here today is gloomy, rain is drizzling sometime, the sun is nowhere to be seen. The perfect weather for getting more depressed when you are in homebound for long. I am not in a mood for cooking though as takeout is off now so I need to cook and that point, easy quick and delicious Shrimp Scampi comes to my mind. It is a quick recipe and easy to make. Generally in this recipe, no veggies are needed yet I used some grated carrot and thin-sliced beans to make it healthy. Cutting veggies very thinner and adding them in dishes is my secret way to make them invisible and the result is my son will eat it without any tantrum.  Noodles or Linguine pasta both can be used to make this dish. Other ingredients and tips are below in the recipe.

Ingredients:

1 pound linguine pasta
1/2 cup chopped shallots(or onion)
4 cloves minced garlic
2 tbsp butter
2 tbsp olive oil
1 pound shrimp peeled and divine
1 tbsp red chili flaxes
1 tbsp lemon juice
1 tsp black pepper powder
1 cup grated carrot( optional)
1 cup thinly sliced beans( optional)
1 cup chicken stock
1/2 cup fresh chopped parsley
Salt for seasoning

Instructions:

1. In a big pan boil water to cook pasta. When it comes to boil add salt and pasta. Cook until it is soft. Drain the water and add some cold water. Again drain the water and keep aside.

2. Wash the shrimp, drain water par dry and rub pepper and salt in it.

3. In a frying pan heat butter and olive oil. Add shrimp cook until turns to pink about 5 minutes. Take it out.

4. In same pan add minced garlic, fry it a bit then add shallots. Fry for 5 minutes then add lemon juice and chicken stock. Let it boil.

5. Now add pasta, cooked shrimp, carrot, and beams in the frying pan. Add chili flakes, black pepper powder, and salt for seasoning.

6. Incorporate everything nicely. Then add parsley leaves and serve immediately.

How easy is that? Delicious Shrimp Scampi is ready to serve. Lunch or dinner sorted in 30 minutes.
