 Nolen Gurer Sandesh: 

Nolen Gur aka  Date Palm Jaggery is a winter delicacy from Bengal. The word nolen means new. In winter new Jaggery is made from palm juice and is used as an ingredient for making various sweets and desserts in Bengal. Nolen Gurer Sandesh is a delectable winter treat, known for its melt-in-your-mouth texture and unique flavour. This traditional sweet features just two main ingredients- freshly made chana( cottage cheese) and Nolen gur(date palm jaggery) prized for its subtle sweetness. Nolen Gurer Sandesh embodies the essence of Bengali winter, capturing the season's flavours in a simple yet deeply satisfying sweet dish.

Ingredients:

  • 500 gm Chana (  Approx.2 to 2 1/2 litre whole milk, depending on the quality of the milk)
  • 2 cups of date palm jaggery approx.
  • 1 tbsp ghee( clarified butter)

 Process:

  • Boil the milk and make chenna/ Chana. Click the link to see how to make Chana/ Chenna.
  • Now after you drained the channa well, place it on a plate and bowl and start mashing it with your hands for 5 - 8 minutes. After 8 minutes it will be soft.
  •  Add Nalen gur( Date palm Jaggery) to mashed chana and mix it thoroughly.
  • Heat a nonstick pan or Kadai and place the chana mixture on it. The flame should be always low. Stir continuously for 5 minutes, the chana mixture will come together by now. Cooking more time will result in a dry mixture which is not preferable for making Sandesh.
  • Transfer it to a plate and let it cool. 
  • Then make small balls out of it. If you have a mold for making Sandesh then smear ghee on it and press the mixture to get the imprint. Otherwise, roll out the ball and just press it in the middle. Do the same to all.
  • Sandesh is ready to go. Surprise your near and dear ones with your homemade classic this festive season.
