Paneer Cutlet( Indian Cottage cheese Cutlet)

Paneer pronounced as 'pani - r' is a fresh cheese very common in South Asia. In Indian vegetarian cuisine paneer or Indian cottage cheese played a big role. After processing, it available in grocery shop like a white block, then it cut into cubes for making curry or other paneer dishes.

My family are not very fond of Paneer dishes except me. I always try to make different dishes with paneer to make it favorable by my family.. Last time I make Paneer cutlet which my son and husband liked most. I grated panner block and added potato and some spices with it, then  I dip into egg and coated in panko bread and fry.  Its  easy and very scrumptious as an evening snack. Paneer is available in every Asian or Indian grocery shops. Other than that cottage cheese(small curd)  also can be used to make this dish. 




Serves - 4

Preparation time - 30 minutes

Cooking time - 15 minutes




Ingredients                                                

1 Paneer block(grated)

1 big potato(mashed)

1 onion (grated)

2 cloves garlic(minced)

3 green chili(small pieces)


1 tsp black pepper powder

1 tsp red chili powder

1 tbsp lemon juice

1 tsp chat masala

2 tbsp rice flour

1 egg

1/2 cup chopped coriander/cilantro leaves

Panko bread crumbs

Salt to taste

Vegetable oil for frying


Method

In a bowl add grated paneer, mashed potato, salt, black pepper powder, red chili powder lemon juice, chat masala, green chili paste, minced garlic, grated onion, chopped cilantro and rice flour. Mix everything very well.

Now using hands take an egg size portion of the mixture and by pressing with hands give it a cutlet shape.

In a small bowl beat an egg.and in a shallow tray spread panko bread crumbs.

Dip the cutlets into egg, then well  coat  both sides .with panko bread crumbs. Place it in a plate. Refrigerate for 30 minutes to set.

In a dip frying pan heat vegetable oil and gently  fry  cutlets until brown by both sides..

Place fried cutlets on a  paper towel to drain. Then serve it with your favorite sauce or chutneys.
