Chicken Reshmi Kebab (Silken kebab)

Reshmi Kebab or Silken Kebab is a traditional Muglai Cuisine. Traditionally Chicken, beef or lamb meat is used. Chicken Reshmi Kebab is made of boneless chicken pieces marinated in yogurt, cream, cashew nuts, and spices and then grilled in oven or tandoor. This Chicken pieces need prolonged marination (minimum 10 hours) for its succulence taste. This kebab is so smooth that it gets his name Reshmi Kebab or Silken Kebab.

Kebab is my all-time favorite. There are many variations of kebabs. Sheek kebab, Galouti kebab, Tangri kebab, Tikka kebab every kebab has its own specialty. Meat cooked in kebab style( in oven, tandoor or grill) is healthy, its contain fewer calories and maintains food value.

Ingredients--

1 lb - chicken breast boneless(cut into bite-size pieces)

2 tbsp ginger garlic paste
6 green chili paste
1 tbsp poppy seed paste
1 tbsp cashew nut paste
1 tbsp kasuri methi ( dried methi leaves)
2 tbsp heavy cream
2 tbsp butter
2 tsp garam masala powder( cardamom, cinnamon and clove powder)
1 tsp black pepper powder
1 tbsp fresh yogurt
2 tbsp lemon juice
Salt to  taste 


Method:-


1. In a large bowl add ginger garlic paste, green chili paste, heavy cream, 1 tbsp butter, garam masala powder, black pepper powder, Kasuri methi, yogurt, poppy seed paste, cashew nut paste, lemon juice and salt as per taste. Mix it well.


2. Add chicken pieces and coat very well. Cover and marinate for 24 hours, minimum 10 hours.


3. Preheat grill and spray cooking oil. Thread chicken pieces on skewers. 


4. Brush chicken pieces with butter. Place skewers on heated grill. Slowly cook chicken turning once until chicken is properly cooked.


5. Serve with  green mint chutney and Naan(Indian flatbread).
