Nargisi Alurdom( baby potatoes stuffed with chicken mince)

Alur dom is a famous dish in West Bengal, India. Phulko luchi(hot puffed handmade bread) with alurdom is Bengali's favorite dish in every occasion or festival and sometimes in sunday brunch. Alur dom is a Potato currry with rich spice may be it in gravy or dry masala. Baby potatoes are best for alurdom. My uncle was in catering business. In his menu he introduced a dish, Nargisi Alur dom( Stuffed potato curry with chicken mince) .Baby potatoes stuffed with cooked chicken mince and then braised into rich gravy. That was long time ago, still now I remembered the taste of that dish. My uncle and his recipe is very close to my heart. Memories of childhood is treasure I cherished those moments and sometimes it gives strength to move on in  fast life. It's one of my favorite recipe I hope everyone will like it.





 Serves - 2

Preparation time - 40 minutes

Cooking time-  50 minutes.


Ingredients

10 baby potatoes( peeled and scooped )


1 tbsp of all purpose flour

Salt for seasoning

Vegetable oil

For stuffing

1 medium tomato( chopped)       

1 cup chicken mince

1 onion(chopped)

1 tbsp ginger garlic paste

1 tsp coriander powder

2 tsp red chili powder                                

1 tsp turmeric powder

1 tsp garam masala powder
( cinnamon,clove, cardamom powder)


For Gravy

1 onion (chopped)

1 tbsp ginger garlic paste

1 dried red chili                                                     

1 bay leaf                                                              

2 tsp green chilies

1 tsp coriander powder

1 tsp cumin powder

1 tsp turmeric powder

1 tbsp cashew nut paste

1 tbsp yogurt

1 tsp sugar

1 tsp kasuri methi (dry fenugreek leaves)

1 tsp garam masala powder
                                                                                           

Method :-


For stuffing

Heat oil in a pan. Add chopped onion fry until translucent. Add ginger garlic paste and chopped tomatoes.Saute until tomatoes are mashed.Add chicken mince and mix well. Add coriander powder,red chili powder,turmeric powder and mix well. Add salt. Fry mixture until oil separates Keep aside and let it cool.

Making gravy

Scoop out  potatoes to make a cavity inside. Rub salt on it.

Heat oil in a frying pan. Add potatoes and fry in low flame,until golden brown on both side. Take out in a paper towel to drain.

Knead a dough with ' all  purpose flour.'

Fill each potato with 1 tsp of stuffing mixture. Take bean size amount of dough, flatten it and seal the potato to secure stuffing 

Heat oil in a pan. Add dried red chili and bay leaf. Let it roast for a minute then add chopped onions. Saute until translucent Add ginger garlic paste, turmeric, coriander and cumin powder . Add green chili paste.. Mix it well fry until oil separates from masala.

Add yogurt and cashew paste . Mix well and add 1 cup of water. Let it boil. Add stuffed potato. Let it cook for 10 minutes in low flame. Turn once very gently.

Add garam masala powder and mix well.

Take out in a serving dish and sprinkle Kasuri methi on it.

Serve it with Luchi (Puffed hot Indian bread) or roti/parathas.
