Burnt Garlic Fried rice is a quick and easy recipe to make on any occasion or in daily meals. It needed very fewer ingredients which always available in our pantry and it ready in minutes. It can be made with only vegetables or non- vegetarian items. The unique flavor of roasted garlic is the key ingredient of this recipe. Garlic itself has a lot of health benefits, make this recipe more nutritious. I first tasted to eat at a potluck party. My friend brought it, as she is a very good cook she made it awesome. I am in love with this fried rice. If anyone asks me for a fried rice recipe my first choice will be this recipe. In this recipe, I used only vegetables though seafood, meat, and chicken can be added to make chicken or mixed fried rice.

Ingredients:-
1 cup Basmati rice
1/2 cup carrots (small pieces)
1/2 cup green beans (small pieces)
1/4 cup green peas
1 onion chopped
8 - 10 cloves of garlic(crushed)
5 green chilies(chopped)
1 tsp black pepper powder
1/2 cup chopped cilantro
2 tbsp soy sauce
Vegetable oil
Salt for seasoning
Method:-
1. Soak washed basmati rice for 30 minutes.
2.Boil 4 cups of water in a large stockpot or rice pan. When water is bubbling add rice. Cook until rice is 99% cooked. Drain water and spread rice on a shallow tray so it will not overcook.
3. In a large pan heat 3 - 4 tbsp of vegetable oil. Add crushed garlic, roast until it is lightly browned. Take out half of the roasted garlic and keep aside.
4. Add chopped onions, fry a bit then add all vegetables, chilies, black pepper powder, and soy sauce. Add salt
5. Fry until vegetables are half cooked, add boiled rice and mix it very well. Fry for another 5 minutes and switch off the flame. Add the rest of the roasted garlic and chopped cilantro. Mix it very well. Close the lid and rest it for 10 minutes before serving.
6. Burnt Garlic fried rice is ready to eat, serve it with any veg or non- vegetarian dishes.
