Chicken Stuffed Baked Bell Peppers:

Stuffed Bell peppers are a healthy dish that can be used as a side dish or main dish. If you are dieting it can be a whole meal with some garlic bread. It is a quick recipe, less oil, no carbohydrate. For stuffing, I used chicken mince, jalapeno and smashed corn with some spices. It is topped with mozzarella cheese and some chopped cilantro, baked it and it is ready to go.

Ingredients:-

2 medium-size bell peppers
1 cup Chicken minced
2 tbsp smashed corn
1 tbsp jalapeno peppers
1/2 cup sliced onion
1 tbsp garlic paste
1 tsp black pepper powder
1/2 cup mozzarella cheese
1 tbsp chopped cilantro
1 tbsp olive oil
Salt for seasoning

Method:-

1. Wash the bell peppers cut a thin slice from the stem of both bell peppers to remove the top of the pepper. Clean seeds from bell peppers.

2. Preheat the oven on 400 F.

3. In a frying pan heat olive oil, add garlic paste and fry until light brown. Add onion and saute until translucent.

4. Add minced chicken and mix it nicely, add jalapeno peppers, smashed corn, salt, and pepper. Cook until chicken is done.

5. Pour chicken mixture on both bell peppers, topped with mozzarella cheese and chopped cilantro.

6. In a baking tray spray oil. Place bell peppers, baked it uncovered for 30 - 35 minutes or until bell peppers are tender. Serve it with garlic bread or enjoy it solely.
