Paneer Paratha( Indian Cheese Flatbread):

Lockdown is taken all my creativity. I lost interest in everything. Waking up and roaming around the kitchen to bedroom and living room is kinda suffocating. Today, When I make Paneer Paratha for lunch I feel like shooting the picture of it. As a Bengali rice is my first choice, though I like stuffed paratha as well. I love Aloo Paratha the most.  Today I am not in the mood to make stuffing for it, as it takes a lot of time. I made Paneer Paratha.
Paneer Paratha is the easiest and healthy paratha. You don't need to make stuffing earlier. Just grate some paneer, mix it with chopped onion, garlic, green chilies and coriander leaves with seasoning, stuffing is ready. How easy is that? Ingredients:

2 cup whole wheat flour
2 cup all-purpose flour
2 cup grated paneer
1 cup chopped onion
1 tbsp chopped garlic
1/2 cup chopped coriander leaves/ cilantro
6 green chilies chopped
Salt for seasoning
Vegetable oil 

Instructions:

1. In a big bowl add whole wheat flour and all-purpose flour. Add 2 tablespoons of vegetable oil. Now mix flour with the oil. This process is called ' Mayan'. Making the flour flaky before kneading it with water. Mix it for a minimum of 5 minutes.

2. Now add water and knead a soft dough out of the flour mixture. Cover and keep aside the dough for 20 minutes to set.

3. Meanwhile, make the stuffing. In a mixing bowl grate 2 cup paneer. Add chopped onion, garlic, chilies, coriander leaves, and salt. MIx well.

4. After 20 minutes, heat up a tawa or frying pan. Make medium balls out of the dough.

5. Take each dough and flatten it and add 2 tbsp of stuffing and close the edges to an end. Then press it and flatten it then roll it with a rolling pin.

6. Place paratha in hot tawa, let it cook then flip it over then brush oil on both sides.  Fry all paratha in same way. Use medium heat to cook the inside of the paratha and the stuffing.

7. Hot delicious and mouthwatering Paratha is ready. Serve hot with any veg or Non - veg curry or as I like with Curd and Pickle.
