Cholar Daler Paratha/Bengal Gram Lentil Paratha:

"The mood" is a big thing in my life. It depends on various things naturally it is common with everyone I guess, but mine very much depends, on the weather. I soak Cholar Dal to make Dhokar Dalna the next day. However the next day when I woke up it is cloudy, drizzling, and then cold as well. I lost my mood to make Dhokar Dalna and started thinking about what to make so I can use the Cholar Dal. Now I am getting more options, though that day one thing came on my mind that is Dal stuffed paratha.  Quickly I grind the dal and start making stuffing and at lunchtime it is ready. Other members of my home ate paratha with vegetable curry, I always love stuffed paratha to eat along with pickles. In my opinion, you can't taste the stuffing of Paratha if you eat along with any curry. Cholar Daler Paratha is tasty, delicious, and not very much complicated to make. Oh yes, and for the photo session, I took a little help of my son, the hand in the picture is his( after giving him some extra carton time he agreed, boys you know always work on a deal). I am sharing the recipe of both paratha and the stuffing. Give a try and pour your comments on how it came out.

Ingredients:

For Paratha

4 cups of Maida/ all-purpose flour
1 tbsp vegetable oil
Salt

For stuffing

4 cups of Cholar Dal (soaked)
4 green chilies
1 tbsp ginger paste
1 tsp cumin seeds
1 tsp fennel powder
1/2 tsp hing powder
Salt for seasoning
Vegetable oil for frying and stuffing

Instructions:

1. First, we will make the stuffing, stuffing need to be cold before stuffed in the paratha.

2. Grind soak Cholar Dal in a smooth paste along with the green chilies.

3.. Heat oil in a frying pan, add cumin seeds and hing powder. Saute for a while then add Cholar dal paste into it. Stir continuously and add fennel powder, ginger paste, and salt. 

4. Cook until it came together like a dough. Transfer it to another bowl and let it cool.

5. Now while the stuffing is cooling make the dough, In a bowl add maida( all-purpose flour), oil, and salt. Mix it very well which we called 'Mayan', about 5 to 8 minutes.

6.  Now slowly add water to make a dough, the dough will be not very soft or hard. It needs to be medium. Cover to and rest for 20 minutes.

7. Take each dough ball and flatten it and add 2 tbsp of stuffing and close the edges to an end. Then press it and flatten it then roll it with a rolling pin.

6. Place paratha in hot tawa, let it cook then flip it over then brush oil on both sides.  Fry all paratha in the same way. Use medium heat to cook the inside of the paratha and the stuffing.

7. Hot delicious and mouthwatering Paratha is ready. Serve hot with any veg or non - veg curry or as I like with Curd and Pickle.
