I am always in quest of light yet healthy lunch recipes. I always end up with the soups or salad. Kale is a nutritious benefit on it and when it mix up with pasta it makes a good healthy lunch option which is tasty and healthy. 3 cups roughly chopped kale
1 tbsp avocado flesh
2 tbsp walnut
1/2 cup lemon juice
1 tbsp black pepper powder
2 tbsp olive oil
1 tbsp green chili paste
2 garlic cloves
2 tbsp parmesan cheese
1/2 cup mozzarella cheese
1 lb whole wheat pasta
Salt for seasoning
Instructions:
1. In a big pan start heating 4 cups of water and prepare pasta as per box instructions.
2. In a food processor blend chopped kale, walnut, lemon juice, salt, parmesan cheese, black pepper powder, olive oil, and green chili paste to make a smooth green pesto paste.
3. After pasta is ready, let it cool a bit then toss pesto with pasta, add mozzarella cheese and mix well.
4. Kale pesto pasta is ready to serve. serve it warm or cool.
