Rabdi/ Rabri:


Rabdi is a popular North Indian sweet dish made of milk. This rich dessert is made by boiling milk on low heat for hours until it becomes dense and changes color to pale yellow. Layers of cream begin to form and kept on one side of the vessel. Nuts, sugar, and flavored ingredients are added to it to give it flavor. Chilled Rabdi is a super tasty dessert, relished by several parts of India in festivals or occasions.

My husband loves to eat Rabdi/ Rabri. It is a long process to make it though sometimes I spare the time to make him happy. People like to add nuts and dry fruits on Rabdi, however, I never add those. I always like to maintain the taste of the dish as it is, and actually, it tastes so divine that you never feel to need anything. When Rabdi is cold it is tastier.  For making Rabdi you need to follow patience and be cautious then it is not very much tough though of course time-consuming.  Do you a Rabdi lover? Ingredients:-

1 liter of Whole Milk

 1 cup Sugar 

1 tsp cardamom powder

1 tsp rose water or kewra water


Method:-

1. In a thick pan add 5 cups of milk. Heat milk and when it starts to form a layer of cream on top turn on to medium heat.

2. With a spatula move the cream layer and stick it to the side of the pan. Keep on collecting the cream layer on the side of the pan and stirring occasionally the milk to prevent burnt from bottom.

3. After the milk reduces to half add sugar and cardamom powder. Keep collecting cream layers on the side of the pan. When milk reduces 1/4 quantity of original milk scrape all the layers from the side of the pan and mix it to the milk. Add rose water.

4. Serve chilled.
