Beetroot Halwa:

If you are like to eat Carrot halwa / Gajar Halwa then you are going to love Beetroot Halwa. It tastes awesome. Actually, when I make this halwa I am not actually had the plan to make it, I am about to make Carrot Halwa and then figured that there is no carrot left in the freezer but I find some beetroots and started making halwa with it.  Craving is a thing you know? The process is almost the same though I found that beetroot cooks fast than the carrot. 
The best part is my son loves it.  I am so happy. feeding him beetroot is impossible but as I gave him as Halwa he gobbled it up.

Ingredients:

4 cups grated beetroot
1 cup evaporated milk
1 bay leaf
2 tsp cardamom powder
2 tbsp sugar
4 tbsp ghee
2 tbsp raisin(optional)
2 tbsp Cashew


Instructions:

1. First, wash and peel the beetroot. then grate it nicely.

2. Heat ghee in a frying pan. Add bay leaf and grated beetroot. Fry the beetroot for 6 - 8 minutes. Add evaporated milk raisin and cashew. Let it cook until the liquid absorbs.

3. Now add sugar and cardamom powder. Cook until it gets dry and comes together. 

4. Beetroot Halwa is ready. Serve it hot or cold, both taste different. Garnish with Cashew. Enjoy!!
