Narkeler Bora/Coconut Fritters:
Maa used to make Chingri macher malaikari, the dish is based on jumbo shrimp or prawn and coconut milk. We had plenty of coconut in our house and maa never used store-bought coconut milk or coconut powder. After squeezing the milk from grated coconut maa used to make Narkoler bora (coconut fritters)with the leftover grated coconut. It is so delicious and tasty half of the rice I used to eat with it, though for making it you can use normal grated coconut. The recipe is simple, you need grated coconut, onion, green chilies. rice flour and gram flour and a pinch of salt. Mix it, fry it and you are ready to taste scrumptious tasty fritters on your way. It can eat as a snack or with hot steamed rice with green chilies.

Ingredients:
2 cups grated fresh coconut
1/2 cups chopped onion
6 chopped green chilies
1/2 cup besan( gram flour)
2 tbsp of rice flour
Salt for seasoning
Vegetable oil for frying
Instructions:
1. First, grate the coconut with a coconut grater.
2. In a mixing bowl add all ingredients except oil and mix thoroughly in a binding consistency. If needed add more besan.
3. Heat oil in a frying pan. Take some mixture and give a shape like fritters and fry in low flame until light brown.
4. Serve hot with hot steamed rice or as tea-time snacks.
