Palak/Palang Mushroom:

 I was about to make Palak paneer, and start gathering ingredients washing palak/ spinach, suddenly it came on my mind that I already make Panner Pakoda with the Paneer. I thought in mind no worries in my freezer I found a pack of Mushroom and I make Palak Mushroom. Next time, when you want to make Palak Paneer but Paneer is not available in the pantry easily make Palang / Palak Mushroom in the same manner.  Not only that this is a fresh dish for the people who love mushrooms. Spinach is a healthy leafy vegetable, full of vitamins and minerals. Mushroom has antioxidants properties.  Likely it is a healthy and easy dish.

In my home, everyone likes this dish and it is kinda changed for them so I am satisfied with it. Though I do not have a plan to make it so the mushroom I used is the smaller size. Always use big size button mushroom, it gets shrunk a bit after cooking.

 Ingredients:

  1 lb whole button mushroom 
  1 bunch of spinach
  1 medium onion chopped
  3 garlic chopped
  1 tbsp ginger paste
  1 tomato chopped
  1 bay leaf
  1 dry red chili
  1 tbsp whole garam masala
  1 tsp cumin seeds
  1 tsp coriander seeds
  2 tsp turmeric powder
  6 green chilies 
  1 tsp Kasuri methi( dry fenugreek leaves)
  2 tbsp butter/oil
  Salt for seasoning

 Instructions:

 1. First, Soak the spinach bunch into lukewarm water, it will accumulate the dirt in the bottom. Wash the mushroom thoroughly removing all the dirt and drain in a strainer.

2. Heat butter/oil in a wok or frying pan. Add bay leaf, dry red chili, and cumin seeds. let it roast a bit then add whole garam masala. 

 3. Now add chopped garlic saute a bit and add chopped onion. Fry until translucent.  Add chopped palak,chopped tomato, green chilies, coriander seeds, turmeric powder, ginger paste, and salt. Fry until the ghee separates.

 4. Now in a blender blend all the fried masala to a smooth paste. Add a cup of water.

 5. Transform the paste into the wok again and let it boil. After it starts bubbling add whole mushrooms. Let it cook for 10 minutes. 

 6. After 10 minutes, check the seasoning and add Kasuri methi. Delicious Palang/ Palak mushroom is ready to serve. Serve it with rice items or with flatbreads, the choice is yours.
