Chicken & Bell Pepper Stirfry:
Chilly Chicken is my son's favorite dish. Other than that he doesn't take interest to eat any other chicken dish. However, we are bored to eat chilly chicken and I try to make a chicken dish similar to chili chicken or taste like that. Today I make Chicken & Bell Pepper Stir fry, it is quite similar though the various color of bell peppers make it vibrant and the smell of bell peppers is quite welcoming. I stir-fried the chicken and it is as well good as a starter or a side dish. It well goes with simple cheese linguini pasta which I make later to accompany the dish. The great thing is it is easy to make, which is the main criteria for a daily meal maker's mom. Serve it quickly after you make the dish otherwise, the crunchiness of the chicken will go as it will absorb more gravy.

Ingredients:
1 lb/ 500 gm boneless chicken breast
2 cups sliced bell peppers( red, yellow, orange, green)
1 cup thick sliced onion
1 tbsp garlic paste
2 tbsp onion paste
7/ 8 green chilies sliced
1 tbsp hoisin sauce
1/4 cup soy sauce
2 tbsp hot sauce
2 tbsp tomato sauce
1 tsp black pepper powder

2 tbsp sugar
1 egg
1/4 cup cornflour
2 tbsp all-purpose flour
Salt for seasoning
Olive/Vegetable oil as needed
Instructions:
1. For making Bellpepper chicken first we start with cutting the chicken into bite-size pieces.
2. In a bowl break the egg and add all-purpose flour, cornflour, 2 tsp salt, black pepper powder and lastly chicken pieces and mix it well.
3. Heat oil in a frying pan. Fry battered chicken pieces in a batch until light brown. Then drain in a paper towel.
4. In a bowl add all sauces, 2 tsp salt, sugar and mix well.
5. In the same oil add garlic and onion paste. Fry until translucent. Then add the sauce mixture stir it for 3 minutes then add sliced bell peppers and onions. Fry for 2 minutes.
6. Now add the chicken and toss it until it is fully coated with the sauce. Cook another 3- 4 minutes then add ginger and green chilies and give a stir.
7. Bell pepper and chicken stir fry are ready to serve. Don't cook it for long. This dish needs to be crunchy and fried. Serve immediately with noodles or pasta or even as a starter.
