Chicken with Mushroom and Bamboo shoots:

I love cooking, it's my passion, besides I like reading books, gardening, etc. Every so often when I am reading an interesting book and very much keen to finish it. I take easy and short recipes so I can dig in my book quickly. That time chicken stir fry dishes come very handily, easy recipes just the magic of sauces and blending them together, taste good, in my son's word 'mommies magic'. Chicken with Mushroom and Bamboo shoots is one of them. I always try to use a few ingredients as possible. This dish well goes with sticky rice, fried rice, steamed rice or noddles dishes. Not very good to go with flatbread. 
Now, if you not ever tried bamboo shoots before, first experimentally try it. Bamboo shoots have an aroma that is not liked by everyone. Fortunately, my family loves bamboo shoots so I made soup, noodles and many other dishes with it. If it suits you, you will start loving it, dishes become very tasty with it.

Ingredients:

500 gms boneless chicken breasts
1 cup sliced bamboo shoots
2 cup sliced button mushrooms
1/2 cup green chilies
1/2 cup sliced onions
1/2 cup chopped tomatoes 
1 tbsp garlic paste
1-inch ginger strips
6 chopped green chilies 
1 tbsp oyster sauce
1/2 cup soy sauce
1 tbsp hoisin sauce
2 tbsp corn starch
Vegetable oil
Salt for seasoning

Instructions:

1. First, cut the chicken into bite-size pieces. In a bowl add chicken pieces, 1 tbsp soy sauce, 2 tbsp cornflour, and salt. Mix it very well, keep aside.
2. In a small mixing bowl add oyster sauce, soy sauce, and hoisin sauce. Blend it with a spoon.
3. Heat oil in a frying pan or wok. Fry all the chicken pieces in batches until cooked. Drain in a paper towel.
4. In the same oil add 1 tbsp oil and add garlic paste, fry until light brown, add sliced onion and saute for 2 minutes then add tomatoes and fry for again 2 minutes.
5. Now add bamboo shoot slices, mushroom slices, ginger strips, and green chilies.
6. Saute for 5 minutes then add sauce mixture, coat it very well, fry until all the liquid is absorbed. The sauce mixture has salt in it, check the seasoning before adding salt.
7. Chicken with Mushroom and Bamboo shoots are ready to serve. Serve hot with steamed rice, fried rice or noodle dishes.
