Grilled Mini Bell Peppers:

When it is called for snacks or starters I always prefer to bake or grilled stuff. It is healthy and more or less easy to make. The last couple of weeks back I made Grilled Honey Garlic Tofu which is liked by my family. Now I tried my hand on Mini bell peppers grilling. It is a hit too. I used very few ingredients that are commonly available on everyone's pantry. I made stuffing with mushrooms and onion with lots of cheese, and that's it. A colorful tasty treat is ready to serve. Merely 30 minutes it took and done!

Ingredients:

4 mini bell peppers
1 chopped onion
2 cloves of garlic
5/6 green chilies
1 cup chopped button mushroom
A handful of mixed shredded cheese
Chopped Coriander leaves
Vegetable oil
Salt for seasoning


Instructions:

1. Cut the mini bell peppers in half. Chop onion, garlic, mushroom, and green chilies.

2. In a frying pan heat vegetable oil, add chopped onion saute a bit then add chopped garlic. Let it cook for a while then add chopped chilies and salt. Add chopped mushroom.

3. After mushroom is cooked add 1/2 cup of mixed shredded cheese. Mix well, stuffing is ready.

4. Stuff the stuffing in halved bell peppers. Do the same to all. Sprinkle chopped coriander leaves on all.

5. In a grill pan or skillet heat up vegetable oil, brush it to spread it. Place or stuffed bell peppers.
Cover them with aluminum foil. Cook in low flame for 5 minutes.

6. After 5 minutes open the cover and add some oil on it. Again cover and cook for another 10 minutes in medium flame.

7. Open the cover and add a spoonful of cheese on each of the bell pepper.

8. Serve it hot. Tasty, delicious, and healthy Grilled Bell peppers are ready,
