Jello Poke Cake:

Jello Poke Cake is a truly delicious cake. The picture shows it right? The making is simple but can be the show-stopper. A simple cake with the dipping of strawberry-flavoured jello inside. It is very good for the tea party and as a snack item. My kid is delighted after I present the cake. The ingredients are below. Try my recipe and leave your comments in the comment box below.

Ingredients:
For making the cake:

1 1/2 cups of all-purpose flour
1/2 cup soft butter
1 cup of sugar
2 large eggs
1/2 cup whole milk
1/4 tsp salt
1/2 tsp vanilla extract
1 box strawberry jello box
1 cup of boiling water

 For Frosting:

1 1/2 cups of powdered sugar
1/2 tbsp milk, more if needed
1/6 cup of soft butter(not runny)
1/2 tsp vanilla extract
1 cup chopped pecan for garnishing

Instructions:

1. Preheat oven to 400 degrees F.

2. In a mixing bowl sift flour, baking powder, and salt.

3. In another bowl add soft butter and sugar and whisk with a spatula or use an electric mixer set at low speed.

4.  Whisk it until fluffy then add eggs( one at a time), add vanilla extract and milk, and beat on high speed for 2 minutes.

5. Grease an 8-inch round cake pan and dust with flour. Pour Cake batter and bake for 30 minutes or the skewer inserted came out clean. Cool the Cake in the pan for 5 minutes then place it in a wire rack and cool completely.

6. Using a chopstick poke the whole cake. 

7. Mix jello powder in 1 cup boiling water until dissolved. Carefully pour the liquid all over the cake. Cover and place it in the freezer for 3 hours to set.

8. Meanwhile, make the frosting. In a bowl whisk powdered sugar and butter. Stir in Vanilla and 1/2 tbsp of milk. Set the mixer at a low speed.

9. After the cake is set smear Vanilla frosting on the top of the cake and sprinkle chopped pecans.

Jello Poke Cake is ready to serve.
